III. Catalog Course Description
This lab will provide students with hands-on opportunities to work in a restaurant environment by working in the Desert Café.
IV. Student Learning Outcomes
Upon completion of this course, a student will be able to:
- Demonstrate the proper method to greet a guest, prepare a table for service, set a table, clear a table, and communicate effectively with the needs of the guest.
- Demonstrate a proper and professional form of communication between front-of-the house and back-of-the house staff members.
- Perform a “Tableside Caesar Salad Demonstration.”
- Describe and demonstrate safe food handling practices, workplace safety, food allergens and correct hand washing techniques.
- Demonstrate the proper procedures when opening, handling and closing a guest check.
- Demonstrate proper procedures on the point-of-sale terminals in the café.
- Demonstrate proper way to carry beverage trays and large oval trays.
- Demonstrate the proper side work set-up and closing procedures
- Discuss and demonstrate the proper way to serve food and beverages and clear food and beverages.
- Demonstrate proper table set up for a catered etiquette lunch.
- Demonstrate the proper counting back change procedure.
