TR5140 Advanced Nutrition: Bioactive Compounds in Foods

There are biologically active compounds, found mainly in plant foods (sometimes called phytochemicals) that are not nutrients or human metabolites and that have potentially important effects on human physiology. This course reviews the current evidence on these compounds, including chemical structure and nomenclature, biological effects, food sources, absorption and metabolism, potential therapeutic uses, and toxicity. Examples of compounds to be discussed: bioflavonoids, carotenoids, tocopherols/tocotrienols, plant sterols, pre/probiotics, indoles/glucosinolates and alkenyl cysteine sulfoxides.
